Can do cardio exercises keep your metabolism up and stop your body from going into starvation mode from not eating enough calories a day?

I know it is not healthy so you don’t need to tell me that and I don’t need advice on healthier ways to lose weight.
I do eat, just not a lot. Like today for breakfast I have a bowl of plain oatmeal with raisins and lunch I had an egg white omlett with spinach, tomatos and light laughing cow cheese.

What are some cardio exercises that I can do that will not aggravate a knee injury?

I have a doc appt made but until then I must cut out jogging, elliptical and cycling as not to aggravate the injury. What are some cardio exercises that can be done in the mean time?

Also how do I make sure I do not lose muscle tone if I cannot do strength training with my legs also?
